September Recipes

Summer was a blast!  So much so, that I decided to give the blog a break...more kid time and travel time....but, I am BACK!!
     "Since ancient times, September has been viewed as the beginning of the new year, a time for reflection and resolution...when the leaves start turning colors, it's time for turning over a personal new leaf so that our lives might be restored", says Sarah Ban Breathnach in her book "Simple Abundance".  I don't know about you, but by Labor Day I am READY for a change.  Get rid of the heat and all the burgers we've ended up consuming out of ease the last few weeks of summer.  Get ready for structure, kids in school (more me time), new Fall shows, apples, bonfires, smells of cinnamon and spice.  This month I focused on some hearty meals with fall flavors (homemade applesauce anyone?), quick and easy recipes (or ones that can be used for leftovers) to accomodate the hectic school/activity schedule (Class Eggplant Parm), and some "different" ones I've never tried (Coconut Noodles with Scallops!)

Pan-Fried Pork Chops and Homemade Applesauce
Quick and Easy Pork and yummy apples!! Double up for tomorrow night, too!

Summer Squash and Corn Chowder
This is awesome....but it takes a little bit of time. I doubled it up and froze it for some future lunches.  Serve with corn muffins hot from the oven and a simple salad!
Maple-Glazed Salmon
6 minutes. That's it. Sweet, Salty and still looks so fancy! This salmon is broiled and the maple syrup carmelizes to a wonderful crunchy crust.


It's eggplant season and although this is a 2 step process, it serves 10, so you can have again or serve a crowd! Serve with spinach salad and rigatoni with sauce!


Fiber, shrimp, sausage, veggies....serve with crusty bread and this can work for tomorrow's lunch, too.




Grown up mac&cheese! Easy enough for a weeknight supper that kids will love, too. Serve with sauteed broccoli and garlic!


Something different!!  Asian spaghetti and meatballs!


This is one of the best risottos.  Try it and you will want to bring it everywhere this fall. Perfect comforts of creamy, salty, sweet, and cheesy!  Pair it with simple grilled or roast chicken if you want a complete meal.


Another new one.  This recipe looks both light and delicious, yet warm and cozy...perfect for September!



Gnocchi with Shrimp, Asparagus, and Pesto
Classic go-to.  This pasta dish is slammin! Double up...great for leftovers!
I wanted to try some healthier options for snacks for my boys and these looked both appealing and EASY to conjure up with ingredients on hand!
