October Recipes

It's officially fall!  Pumpkins, corn, gourds, colorful mums, hay rides, cinnamon, apple cider, fires, witches, ghosts, goblins, chocolate....
This month life seems to get more hectic with family/school/work activities.  We feel a little more tired and in need of cozy comforts as our nights become closer and closer to dinnertime.  Rich stews, flavors of the season, and roasts or slow-cooked recipes that give the house that wonderful aroma are what's in store.  I chose recipes that can serve more than 4 to use for after pumpkin picking or trick-or-treating.  Chili for Sunday Football or a beautiful roast Chicken for a family dinner are included, as well.

Head to an apple orchard and pick some braeburns to use in this unbelievably tasty dish.  Your house will liven up as these thighs roast with all the seasonings.  Serve with roasted brussells sprouts and mashed potatoes.

Soooooo easy, hearty, filling and delicious. I actually put it all into a crockpot last year so it was incredibly easy for a weeknight supper.


My friend, Jill, chose this soup during one of our supper clubs & I have loved it ever since.  Not only is it so tasty...but extremely quick and easy.  It's also a great lunch with a hunk of bread!
 


Great family dinner to serve a crowd.  I've also used these herbs on a smaller chicken that I put in a crock pot all day!! Serve with Cauliflower and Stuffing!


 A really good fall pasta dish.  A fancy take on the fettuccine alfredo...but with toasted walnuts and creamy gorgonzola.  Serve with a spinach salad.


 Another quick weeknight supper that has all the flavor without all the fat.


Trying to get a fish recipe in every month! This is flavorful and easy with some bread or rice to soak up the mediterranean sauce!

I've done this in a crock pot, as well.  Wonderfully seasoned apple cider serves as the gravy for this pork. yum.
Ham Steak and Pierogis-no recipe...just fry up a good ole ham steak and serve with fried pierogis and onions. mmm.

September Recipes

Summer was a blast!  So much so, that I decided to give the blog a break...more kid time and travel time....but, I am BACK!!
     "Since ancient times, September has been viewed as the beginning of the new year, a time for reflection and resolution...when the leaves start turning colors, it's time for turning over a personal new leaf so that our lives might be restored", says Sarah Ban Breathnach in her book "Simple Abundance".  I don't know about you, but by Labor Day I am READY for a change.  Get rid of the heat and all the burgers we've ended up consuming out of ease the last few weeks of summer.  Get ready for structure, kids in school (more me time), new Fall shows, apples, bonfires, smells of cinnamon and spice.  This month I focused on some hearty meals with fall flavors (homemade applesauce anyone?), quick and easy recipes (or ones that can be used for leftovers) to accomodate the hectic school/activity schedule (Class Eggplant Parm), and some "different" ones I've never tried (Coconut Noodles with Scallops!)

Pan-Fried Pork Chops and Homemade Applesauce
Quick and Easy Pork and yummy apples!! Double up for tomorrow night, too!

Summer Squash and Corn Chowder
This is awesome....but it takes a little bit of time. I doubled it up and froze it for some future lunches.  Serve with corn muffins hot from the oven and a simple salad!
Maple-Glazed Salmon
6 minutes. That's it. Sweet, Salty and still looks so fancy! This salmon is broiled and the maple syrup carmelizes to a wonderful crunchy crust.


It's eggplant season and although this is a 2 step process, it serves 10, so you can have again or serve a crowd! Serve with spinach salad and rigatoni with sauce!


Fiber, shrimp, sausage, veggies....serve with crusty bread and this can work for tomorrow's lunch, too.




Grown up mac&cheese! Easy enough for a weeknight supper that kids will love, too. Serve with sauteed broccoli and garlic!


Something different!!  Asian spaghetti and meatballs!


This is one of the best risottos.  Try it and you will want to bring it everywhere this fall. Perfect comforts of creamy, salty, sweet, and cheesy!  Pair it with simple grilled or roast chicken if you want a complete meal.


Another new one.  This recipe looks both light and delicious, yet warm and cozy...perfect for September!



Gnocchi with Shrimp, Asparagus, and Pesto
Classic go-to.  This pasta dish is slammin! Double up...great for leftovers!
I wanted to try some healthier options for snacks for my boys and these looked both appealing and EASY to conjure up with ingredients on hand!

May Recipes

ahhhh....the grass is green, the azaleas are blooming....4 weeks until Memorial Day and bathing suit season!!  This month I chose light dishes with outside dining on the brain.  Grilled meats, seafood, fruits and veggies to prepare us for the tastes of summer.  May also brings us a few special occasions to celebrate (in a lighter way):  Kentucky Derby:  why not try Classic Mint Julips for 3 pts.; Cinco de Mayo: scroll down to my Chili Recipe and serve with baked chips, corn tortillas, beans and lots of veggies to make your own soft tacos or nachos; Mother's Day:  depending on having a brunch/lunch/or dinner I recommend the Pork dish below and maybe Champagne Limoncello cocktails for only 1 pt!!  And pick anything below for Memorial Day Weekend (guests will just love the cute shell appetizer!!)

This is soooooooo easy....just needs time to marinate.  The flavors are scrumptious between the grill, spice and sweetness of the strawberries.  This recipe serves 12 so cut it down to serve your needs.  I would pair this with a nice green salad and some lemon peppered orzo!

"Floribbean" Grouper with Red Pepper Jam

The prep work makes this a special occasion dinner rather than a quick weeknight supper.  But, hey, you deserve it on one of these beautiful weekends.  So, what's not to love...the crust is panko, coconut and cashews...oh yes,  I'm not kidding.  And the jam is balanced out with red and jalapeno pepper and papaya!  So, put on some Bob Marley or Jimmy Buffet for this florida/carribean dish and serve with a crystal light mocktail like a margarita or mojito!!Ya mon!


Grilled Chicken with White Barbecue Sauce

This is one of my favorite BBQ sauces for the past 9 years! I've used it on everything for a change from the classic messy BBQ sauce. And soooooo easy!!!


Pan-Seared Scallops with Bacon and Spinach

OMG...i HAVE to get an old school iron skillet (Right, Mrs. Horton??)  I have been trying to cook restaurant-like scallops but always fall short because it is sooooooo easy to "boil" them instead because of all the moisture left in them.  So pat them with paper towels forrrrrrrrrever to dry them out.  And the key is an extremely high heat.  I absolutely loved this dish with the bacon...mmm...and because there are no carbs, it gives you an excuse to get a nice big baguette to dip into the sauce and have it drip down your chin! Mua!



Spring Linguine with Basil

Sometimes you just need a quick, easy, mid-week supper that screams, "Spring".  This is it.






Turkey Spinach Lasagna

Great for gatherings or on another day of Memorial Day Weekend when you're not grilling.  You can also make ahead and freeze.  I've used this as a vacation meal, too....letting it thaw while we are at the beach all day and popped it in the oven while the gang gets showered.  It's really good lasagna that includes your veggies so you're all set. yum.






Bow Tie Pasta with Roasted Red Pepper Sauce

A little higher in points, but if you're craving a creamy pasta dish similar to a vodka sauce, this one is great.  Kids will love it, too!





Cool Chicken Salad Shells

I just can't take how cute these are.....artichokes, olives, fresh basil...I admit I haven't tried it...but they are just so cute.  I think they would make a fantastic appetizer to any seaside gathering or summer picnic.  8 pts. equals 3 shells.

Another summer staple for many many years.  I LOVVVVVVVE crab cakes, but they are usually so fattening and greasy (oh, did my mouth just water?) but if you would like to have that craving fulfilled on a regular basis, go for these for only 6 pts!!!  They are a bit time consuming because of the prep, but the red pepper mayo makes it worth it! Bake up some potato wedges while you're prepping and pretend they are fries on the side!!

April Recipes

     Spring.  It's here.  I cleaned my grill (well, my husband, Gerard, was told to).  The firepit has been used once already with friends and children surrounding it with stories and wine.  I love this month because I can wear flip flops with sweaters; take long walks outside & yet still need a cozy fire at night.  The smell of windows open and new spring candles; putting away the winter throw pillows and dark colored flower arrangements and replacing them with pastels and light.  The same with our meals!!! Don't put away your crockpot yet, it could still make cozy dishes but with some lighter ingredients....a slow cooked meat pairs well with light risotto and asparagus!
      This month I didn't really go fancy.  Our home is busy and my spirits keep dipping low as I pray for an ill friend.  I needed easy, yet satisfying dishes.  Also...I will add one of my favorite holiday ham recipes...I've made it for several years in a row (just don't wear a white shirt! hahaha!!) Enjoy!

Perfect to enter spring...if you can't find pancetta, use turkey bacon...it works just as well!  I've also used cavatelli or other type of pasta when I didn't want to run out.  Pair with a beautiful dark green salad with red onions and grape tomatoes and don't forget a glass of chilled sauvignon-blanc...mmm.



  7 points  Bring on the BBQ!  This is sooooooo quick and easy!  I will quickly whip up boxed mashed potatoes with  garlic and chives and maybe some steamed green beans!



     7 points So heres the deal with this....some stores are having a buy-one-get-one-free roast chicken, so you can do this twice! Pop that baby in the crockpot (even if frozen) during your morning coffee and dump any kind of spices you have on hand over it and tell it "mama will c u later".  That night have wonderful moist chicken with a side of veggies and maybe some rice-a-roni...yum...then save 2 1/2 cups of the shredded goodness for the chimichanga recipe (you can even freeze the cooked meat and defrost later or just make the new dish tomorrow.)

I'm still hungry looking at this chimichanga...so my dish is filled up with a mexican rice (with canned tomatoes), side of fat-free refried beans, side of black beans, salsa and some reduced fat cheddar thrown on top. Now we're talking.
 
     5 points  "Paillard" just means thin chicken.  You can either pound the f*@! out of it and get raw chicken all over your cabinets (yes, i think i'm a good cook, but i never said i was a clean one)  or just buy the already thin cut breasts that cost, like $3.00....plus...when you weigh them out on your W.W. scale (you all have one by now, right?????) you can probably eat 2 breasts and to me, 2 is always better than one. :)

I'm gonna roast up some cut baked potato wedges with some paprika and sea salt and black pepper to go with, too.

I love what I can't have....or what I can "hardddddly have."  My husband eats everything and anything and all of it.  But....NOT...Goat Cheese.  (My first dinner I ever made him was Chicken stuffed with goat cheese and spinach...lol).  So, to me...Goat Cheese is a lavish luxury...creamy on the tongue...salty and bitter in the back...ooh yeah baby.  So, this recipe...he gets a nice cheddar with roasted pepper garnish, while I savor the goat cheese.  This has been one of the most awesome staples of my summer for the past 3 or 4 years.  When I saw how much fat store bought turkey burgers had, I was floored...and decided to go with these...make a bunch and freeze for the summer.  The relish is the most deliciously sweet and salty and vinegary topping and makes me feel like I'm getting my "veggie" on even at a picnic with all those chips I know I'm gonna have.  Top with a gorgeous tomato and slice of sweet onion and pop open a corona with lime on your deck! Voila!
3 points  This is the ham I have made for a few Christmases and Easters.  It even works with a "cold buffet" for ham sandwiches.  This sauce is sooooo delicious...i must be on a salty-sweet kick these days...the dijon is way too spicy plain, and the jam, too sweet.  But when paired together it is the perfect compliment...a dance party in your mouth.  Beware, though,....everything (from the linens to my shirt!) was purple the first time I served it!!! But, it's worth it...trust me.

March Recipes

     March....still chilly enough for a fire, yet green buds are popping up everywhere teasing us with thoughts of spring!  This month I still long for the cozy, comforting suppers cooked in crockpots and creams; yet the idea of asparagus and lemon are tempting, as well!

     And, of course, St. Patrick's Day...how many points can we ingest on fried fare, thick beer and Nana's soda bread?  I don't even want to know!  So this year, let's try something lighter...a hearty stew made with Guinness Stout...and a new take on Fish-n-Chips: Salt and Vinegar Chip Crusted Cod! I will skip the beers and just add a tad of green food coloring to my 3 point white wine....cead mile failte!

This just looks so lovely (and crunchy), I gotta try it! Serve it up with garlic mashed potatoes and a steamed veggie of your choice!

Trying to incorporate some vegetarian meals....and although i LOVE my chili, this looked a little interesting with the olives, squash, peas and raisins!!!!! A party in your mouth!

1 T RED PEPPER FLAKE
2T CHILI POWDER
2T SUGAR
1T CUMIN
3T TOMATO PASTE
1tsp. OREGANO
1/2 t BLACK PEPPER
1/4 t SALT
2 BAY LEAVES
1 1/4 C. MERLOT OR OTHER RED WINE. (7 PTS.)
2 CANS DICED TOMATOES
1 CAN RED KIDNEY BEANS.

TOTAL 26 PTS.....ABOUT 3PTS PER SERVING.
