March Recipes

     March....still chilly enough for a fire, yet green buds are popping up everywhere teasing us with thoughts of spring!  This month I still long for the cozy, comforting suppers cooked in crockpots and creams; yet the idea of asparagus and lemon are tempting, as well!

     And, of course, St. Patrick's Day...how many points can we ingest on fried fare, thick beer and Nana's soda bread?  I don't even want to know!  So this year, let's try something lighter...a hearty stew made with Guinness Stout...and a new take on Fish-n-Chips: Salt and Vinegar Chip Crusted Cod! I will skip the beers and just add a tad of green food coloring to my 3 point white wine....cead mile failte!

This just looks so lovely (and crunchy), I gotta try it! Serve it up with garlic mashed potatoes and a steamed veggie of your choice!

Happy St. Patrick's Day! Don't forget the malt vinegar and make your own oven baked chips(fries).  Round it out with a refreshing salad!  Slainte!

Who doesn't love this classic?  Toss in some steamed broccoli & maybe some red peppers to give it some bulk!

This is divine....reminds us spring is almost here...especially if served with some roasted asparagus with sea salt and lemon....mmmmm.

Maybe we can't touch "creamy" on restaurant menus....but we can if we make it ourselves!  A nice salad with some chickpeas or cheese for extra protein would go great (add those points, though!)

This is soooo easy. And you could bring it somewhere as an appetizer, too!  This asian dish could also be combined with some rice and stir fry veggies!

Trying to incorporate some vegetarian meals....and although i LOVE my chili, this looked a little interesting with the olives, squash, peas and raisins!!!!! A party in your mouth!

One of my favs at a restaurant...until i saw how fattening it is...jeez.  So, I'm gonna try and see if this recipe measures up...let me know if your does!  Gonna serve some sugar snap peas with!

Again....with the creamy comfort...i LOVE risotto because it's usually difficult to make and fattening..ha...so it's a treat.  Yet, for 8 points I think i can throw a little grilled chicken or shrimp on the side and really enjoy!
