AMY'S CHILI.....(TWEAKED FROM COOKING LIGHT)  USING THIS FOR SUPERBOWL SUNDAY....(YOU CAN MAKE CHILI POTS, NACHOS OR EVEN ENCHILADAS WITH THIS.)
3 SLICES TURKEY BACON, CHOPPED (I THINK 3)
2 C. CHOPPED ONION
1 C. RED PEPPER (I USE JARRED)
8 GARLIC GLOVES (OH YEAH BABY)
1 LB. GROUND BEEF...95% LEAN, 5% FAT   (16 PTS.)
1 T RED PEPPER FLAKE
2T CHILI POWDER
2T SUGAR
1T CUMIN
3T TOMATO PASTE
1tsp. OREGANO
1/2 t BLACK PEPPER
1/4 t SALT
2 BAY LEAVES
1 1/4 C. MERLOT OR OTHER RED WINE. (7 PTS.)
2 CANS DICED TOMATOES
1 CAN RED KIDNEY BEANS.

TOTAL 26 PTS.....ABOUT 3PTS PER SERVING.
GET THIS...SERVING = 1 1/4C!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

TOP WITH 1/4 FF REFRIED BEANS
1/4C BLACK BEANS
LT. SOUR CREAM
1/4C LOWFAT CHEDDAR....BE SURE TO POIINT THOSE UP.

DIRECTIONS:
IN HUGE POT COOK TURKEY BACON WITH COOKING SPRAY TIL CRISP..THEN ADD ONION, RED PEPPER, GARLIC, AND GROUD BEEF TIL BROWNED.
THEN DO 1 OF 2 THINGS....
1. ADD THE REMAINING INGREDIENTS AND SIMMER FOR HOUR....OR
2. THROW IT ALL IN CROCKPOT ON LOW AND LET IT SIMMER!

FINAL MEALS I'M PLANNING BUT HAVEN'T POINTED OUT YET:

2 HAM STEAKS SAUTEED IN FRY PAN , SCALLOPED POTATOES FROM BOX (OMITTING BUTTER), AND VEGGIE, BAKED BEANS.

FROZEN TORTELLINI WITH JARRED SAUCE, RED FAT MOZZARELLA ON TOP AND SALAD

    LOOOOOOOOVED the cuban shredded beef...did it in a slow cooker & it was sooo tasty!!

    Chicken and artichokes...i used boneless breasts cuz i had them..and it was an extremely delicious meal, as well!

    Beef, Cheese and noodle bake...i used ground turkey and it was dry...so i def would use beef next time!

    The chicken with olive tapenade satisfied my salt cravings...so easy and quick and delish!
